When writing in polish i have a hard time on knowing when to use ś and sz because they have similar pronounciations . so i was wondering when to write ś instead of sz ?

Not so similar; "ś" in pronounced soft (palatalized), while "sz" – hard. A tip: if it precedes a vowel, it should be "sz", because you never spell "śef" – only "szef".
it’s different for different words. you need to learn the polish spellings.
